Chicken Rice

When I was a teenager I lived in Singapore for a year with my family. One of the things I remember most about the food in Singapore was chicken-rice. I am sure it is a national signature dish. You could by a plate of chicken-rice for only a few dollars at any local kitchen. Some were quite gelatinous, others were dry and tasteless, but during our stint in Singapore my mother nailed her own version, which was very similar to this. You poach the chicken in stock to give it flavour. The key is to cook it slowly over time with baking paper over the stock to keep the flavour in and the chicken very tender. The sauce was a mix of garlic, soy sauce, peanut oil and spring onions. The veggie dish was a subtle light Asian flavour, you could really taste the veggies – bok choy and shitake mushrooms with a little chili. The subtle flavour really complimented the salty chicken.

The second installment from Brisbane’s Violent Soho detailing their time in the States where they’ll be based for the next year after signing with Thurston Moore’s (Sonic Youth!) Ecstatic Peace label.

“This is in a venue in Milwaukee… it’s an abandoned swimming pool (obviously) and James jumped in and walked around. It was pretty fucking amazing. The venue is this massive building with four or five different rooms in it, and this was backstage at one of the rooms, an abandoned fitness centre that they haven’t used in years and years with this massive swimming pool. So cool. It’s meant to be haunted too…”

Family Bookstore has announced the opening of it east coast pop up store Thirty Days coming to life in New York next month. With an interior designed by the amazing Ben Jones (Paper Rad) and a series of free artist conversations, live bands, performances, author readings, art exhibitions, and art projects curated by David Jacob Kramer and Sammy Harkham, Thirty Days is a destination not to missed (pending global positioning).

It didn’t take long for something to fill the void left by the now-passe trilby and chintzy pork-pie hat, but after a good 6 months off the circuit, headwear is enjoying rejuvenated popularity. In fact, amidst the sea of recent fashion week street-style shots, rarely was a mop spotted without a hat atop it. The awkward face flattening, narrow-brimmed molds of the past (made seriously by unpopular by the powers of LiLo and Ashlee Simpson combined) have all but disappeared, and in their place we now find a series of effortless variations on the classic, universally flattering, wide-brimmed slouch and fedora (see Vena Cava, Moschino and Kenzo). And although this style has proven to be enormously popular amongst the off-duty catwalkers, the are also the more daring few burgeoning a niche for the revival of the turban. We know Prada pushed for this a few seasons ago, with measured success, but will the influence of mega-stylist Catherine Baba see it really take off this time around?

Just because summer has drawn to a close it doesn’t mean that the ocean has gone away, in fact it has come closer. This Sunday the 28th in Melbourne, Speakeasy Cinema, Spunk Records & surf legend Andrew Kidman will present Last Hope a compilation of 16 short films inspired by the sea set to music from the Spunk Records roster combined with a live score by The Windy Hills. With an impressive line up of contributing filmmakers including Albert Falzon (Morning Of The Earth), Last Hope is guaranteed to sooth the soul. We have been told that it’s like a cross between going for a swim and going to a gig so be sure to bring a towel.
